
INGREDIENTS
- 1 ready made shortcrust pastry
- 1 or 2 tomatoes
- Comté cheese or any type of swiss cheese
- Herbes de Provence or dried oregano or thyme ...
- mustard
- salt
- shreded swiss cheese (or you shred it yourself)
INSTRUCTIONS
Preheat your oven at 210°C / 400-425°F.
Use a ready made shortcrust pastry. (this one was organic)
Lay it in a tart dish. Spread two or three teaspoons of mustard in it.
Sprinkle a bit of Herbes de Provence or dried oregano.
Cut slices of cheese (this one was organic Comté cheese - en.wikipedia.org/wiki/Comt%c3%a9_(cheese) - but you can use any type of Swiss cheese like Gruyère), to cover most of the surface of the tart.

I cut this one that special way because my boys aren't too keen on tomatoe seeds but you CAN leave the seeds & make whole/round tomatoe slices !!
Arrange the slices to cover the whole tart space.
Really, you can put them the way you want.
