
You were apparently interested in the muffins I baked yesterday so I shall share the recipe today. That was so super easy. I looked at my archives & noticed that I shared another apple muffins recipe (but with cinnamon) on Oct. 26th 2008, exactly 4 months ago today. I must say that I prefer this one, but if you like cinnamon, you may prefer the other.

APPLE + ROLLED OATS MUFFINS
makes 24 muffins
ingredients
300 g wholemeal flour (but you can use any kind)
20 g baking powder
20 g vanilla sugar
120 g caster sugar (ours is blond, you can use brown)
3 medium apples
2 eggs
250 ml milk
75 g (approx.) rolled oat (more or less)
120 g melted butter (unsalted)
Preheat your oven at 210°C/
In a large bowl, sift the flour & add the sugars, the baking powder & apples (cut into medium cubes). Mix in.
Whip the eggs with the milk. Mix in with the dry ingredients with a metal spoon, but DO NOT knead too much.
Melt the butter with the agave syrup & mix it in, still NOT kneading much. The dough must be irregular & full of lumps !
The success of making muffins resides in making the dough very irregular & not kneading it much !
Fill your molds (3/4 of each - to let the muffins rise) with a teaspoon (easier).
Sprinkle a bit of sugar on each muffin. This way, once melted, the sugar will make a little crust that will prevent the muffin from getting (too) brown.
Put in the oven for 20-25 mn (200/220°C ~ 400/425°F) until a skewer/knife hammered inside a muffin goes out totally dry & clean.

BDABCM - Today I've been in a mood for packing in boxes little things like CDs we don't even listen to, or books I haven't looked at for a while, sorting some more papers (yes, still doing this, and I'm not even done yet, sigh) and trying to declutter every corner. My goal is to leave this appartment with LESS things than we arrived with in July 2007. Believe me, we all buy new things, and still keep the old ones. I've been giving, throwing (to the recycle bin most of them, thankfully), and I do my best to keep in mind that less is more, which is more & more my motto. I'm such a sentimental girl, I tend to keep everything (really, I'm not joking), from the cardboard of the Amazon deliveries, to the bubble envelopes I get when I received an order from Etsy or a sweet gift from a friend. It's been really therapeutic to do this. It helps me keep the very most important (to me), remember the good times, and move forward.
Speaking of moving forward, I must go, it's getting late & I don't neither want you to sleep on your keyboard, reading me. But before you leave, and for the persons who may be interested (I'm thinking of you, Kirsten) , here are the links to :

ReplyDeleteHi Sonia! The recipe sounds delicious. I like muffins more than cupcakes because I'm not a big sweet eater and the frosting is usually too much for me. I love muffins with berries a lot like raspberries, blueberries, etc... (((Hugz)))
