Yesterday I said I wish it would rain ... and it didn't ... BUT it was rainy & cloudy & windy all day. Delicious ! I said I'd love to cook, and that's what I did ! Chocolate Dipped Strawberries & Strawberry - Chocolate Chip - Almond Muffins. Yes, MUFFINS ... A-G-A-I-N. You better get used to it ! LOL *Ü* Can't stop making them, they're too easy & too yummy to make ! 


Oh my, were they delicious ! I DO wonder why I never made chocolate dipped strawberries before !! That's so easy ! I just microwaved few chocolate bits with very few butter in a microwave bowl, heat until completely melted, dip each of your strawberries & put them aside on a waxed paper covered tray, then put into the fridge, at the highest area (the coldest) for a couple of hours. So easy, so yummy, so romantic ! ;-) Now this is the recipe, my friends ... But, first, I had to find a name, so a name I found ... ahem ... ALMOCHOCOSTRAW Muffins ... (yeah, my creativity's been flourishing these days ... LOL)

ALMOCHOCOSTRAW MUFFINS
aka ALMOND, CHOCOLATE & STRAWBERRY MUFFINS
makes 24 (or a bit more) muffins
ingredients :
300 g self-raising flour
75 g flour (I used organic, type 110)
2 eggs
100 g caster sugar (I used organic brown sugar)
a dash of vanilla sugar
50 almond powder
375 ml milk
120 g melted butter (unsalted)
175 g strawberries
125 g chocolate chips (I used dark choco)
50 g "sliced" almonds (don't know the name in English, sorry)

Preheat the oven at 200/220°C ~ 400/425°F.
Either grease your muffin molds with melted butter or oil, or don't grease it, if you own flexible molds like I do.
In a large bowl, sift the flours & add the sugars, the almond powder, the chocolate chips & the strawberries cut into little cubes. Mix in.
Whip the eggs with the milk. Mix in with the dry ingredients (flours + sugars + almond powder + chocolate chips + fruit) with a metal spoon, but DO NOT knead too much.
Melt the butter & mix it in, still NOT kneading much. The dough must be irregular & full of lumps ! The success of making muffins resides in making the dough very irregular & not kneading it much !
Fill your molds (3/4 of each - to let the muffins rise) with a teaspoon (easier). Add a good pinch of "sliced" almonds on top of each muffin & press gently.
Put in the oven for 20 to 25 mn mn (200/220°C ~ 400/425°F) until a skewer/knife hammered inside a muffin goes out totally dry & clean.

And guess what is left when you're done with the baking ??? Washing the dishes & the molds, of course !! I had quite a loot of molds, so I can make pyramids with them, once they've been cleaned !
So this was made in the morning, along with cooking soup & fajitas, for lunch. (soup is for the boys, fajitas was Chris & I's meal) And we had a muffin & 5 strawberries each, with an expresso. Sunday Lunch Treat, I tell you. Delicious.
Then, after lunch, and despite the rainy & cloudy weather ...
...we walked to Disney (Disneyland Paris Resort is approx. 3km away from our building, by foot) Along the way, we met a little Beauty ...
I always wonder how caterpillars we see will be as butterfly ...
On our way, we noticed that the colors in the fields have changed to late summer colors ...
We went to a blackberry bush I had noticed at the beginning of summer, and some of them were ripe. Some were still acid, but I ate one that was sweet & delicious. We'll probably go there again tomorrow evening to pick some. Yum !
We had fun in Disney, and walked all the way back to our appartment. Phew, my legs & feet hurt ! (we were in Paris, yesterday & walked a lot too !) Before the end of the evening, I cut the boys' hair, among other things.
So this was our Delicious Sunday. I hope yours was as good as ours. :)

ReplyDeleteThe strawberry idea sounds so good also. I would have to do it secretly because strawberries don't last long in this house once they are unpacked from the store. We used to go fruit picking every summer at our old house, the children would live on fruit alone if they could.
We love going wild blackberry picking to - FREE food yipee :D
Isn't it strange to see the change in the colours of the season. Greg has already been talking about Christmas! He likes to prepare, which makes sense I know.

ReplyDeleteOh I love the look of those muffins, I must try your receipt, for sure! Yum! You are so lucky to be living so close to Disneyland... Actually we might be taking the girls there this fall, as I will be going down to our factory in the Reims district for an IT update, and if all goes well I will bring my family and well we would only be a couple of hours away from Disneyland... Fingers crossed things will go our way :) Wishing you a gorgeous start of the week.
