One of the reason U is sleeping better at night is probably because I have decided not to put him to nap in the afternoon anymore. It's less practical for me now as I have to look after him so I don't have that free time for myself anymore. Or at least, very few. BUT, the good thing is that he sleeps fine at night. I can't have both I guess. I know that from September he'll be at school in the afternoon too, so I'll have that time for me again. I'm going to enjoy my precious time with him in the afternoon then ! I counted on the calendar, and there are only 8 days of school left. Hardly believe that myself. I guess I'm a bit melancholic today. :( Oh well.
OK. Yesterday afternoon, with the help of my Chef U, I baked Prune & Oatflakes Muffins. Well, um, they turned so much yummier than I expected !

PRUNE & OATFLAKES MUFFINS
makes 24 muffins

ingredients :
225 g self-raising flour
75 g all-purpose flour
2 eggs
120 g caster (brown) sugar
250 ml milk
100 g melted butter (unsalted)
120 g prune (cut into pieces)
50 g oatflakes -or a bit more-
1 teaspoon cinnamon
1 big apple (cut into small cubes)
for the crust :
1 tablespoon all-purpose flour
60 g caster (brown) sugar
4 tablespoons oatflakes
25 g melted butter (unsalted)

Preheat the oven at 200°C ~ 400°F.
Either grease your muffin molds with melted butter or oil, or don't grease it, if you own a flexible mold like I do.
In a large bowl, sift the flours & add the sugar, the prunes & the apple cut into little pieces & the oatflakes. Mix in.
Whip the eggs with the milk. Mix in with the dry ingredients (flours + sugar + prunes + apple + oatflakes) with a metal spoon, but DO NOT knead too much.
Melt the butter & mix it in, still NOT kneading much. The dough must be irregular & full of lumps !
The success of making muffins resides in making the dough very irregular & not kneading it much !
Fill your molds (3/4 of each - to let the muffins rise) with a teaspoon (easier).
Now prepare the crust mix. Mix all the ingredients requested to make the crust. Put a teaspoon of that mix on each muffin (BEFORE putting them in the oven !) and press
delicately to make it stick to it.
Put in the oven for 20 mn (200°C ~ 400°F) until a skewer/knife hammered inside a muffin goes out totally dry & clean.

I have a list of things to do that is a kilometer long today, though both washing clothes or ironing are NOT on the list. I'll have tons to keep me busy & must find tons too to keep the boys busy !

Hello my friend! I just put Gavin down for his nap. I am also starting to skip his nap so he will sleep better but he did not sleep well last night =( So he really needed one today. Mmmm...Prune and Oatflakes muffins! I am imagining their smell! I am going to attempt making Macarons this week! I will definitely post how they turned out...good or bad! =) hehe!
