What's that word ?!! That's the name I gave to the muffins I baked yesterday evening. Chris told me he prefered the Strawbanacinna's rather than the raspberry + white chocolate ones ! Wow. It's true that they were incredibly moist. I used the same recipe I used for the (only) white chocolate ones, and after googling to find an idea for ingredients to use along with strawberries, and that I had at home, I adapted my recipe & decided to add bananas & cinnamon. Hence the weird name StrawBanaCinna. (Strawberry + Banana + Cinnamon) Look at them :


Now, I guess you'd like the recipe, wouldn't you ?! Here it comes ...
STRAWBANACINNA MUFFINS
aka STRAWBERRY BANANA CINNAMON MUFFINS
makes 24 mini muffins (or 12 medium muffins)
ingredients :
375 g self-raising flour
2 eggs
125 g caster sugar
1 teaspoon vanilla sugar
1/2 teaspoon cinnamon
375 ml milk
140 g melted butter (unsalted)
175 g strawberries
1 banana
Preheat the oven at 200/220°C ~ 400/425°F.
Either grease your muffin molds with melted butter or oil, or don't grease it, if you own a flexible mold like I do.
In a large bowl, sift the flour & add the sugars, the cinnamon & the strawberries cut into little cubes & the banana cut into slices. Mix in.
Whip the eggs with the milk. Mix in with the dry ingredients (flour + sugars + cinnamon + fruits) with a metal spoon, but DO NOT knead too much.
Melt the butter & mix it in, still NOT kneading much. The dough must be irregular & full of lumps !
The success of making muffins resides in making the dough very irregular & not kneading it much !
Fill your molds (3/4 of each - to let the muffins rise) with a teaspoon (easier).
Sprinkle a bit of sugar on each muffin. This way, once melted, the sugar will make a little crust that will prevent the muffin from getting brown.
Put in the oven for 20 mn (200/220°C ~ 400/425°F) until a skewer/knife hammered inside a muffin goes out totally dry & clean.
These muffins are very moist, because of the banana & strawberries. When mine were perfect, the knife was not 100% dry.
I have to say that I use much less butter than the book I'm inspiring of requests. And it doesn't affect them at all.
So ... it's 09.30am as I'm typing & in an hour I'll go to the dentist to have the stitches (from the little surgery two weeks ago) removed. I hope it won't hurt too much & that I won't feel any kind of discomfort afterwards. Oh well. It's raining & it will probably rain all day. No laundry for me for the next two days, that's what I told myself. No housework tomorrow between 8am & 4pm. Nothing. LOL I've started making my list of things to do tomorrow (the boys are going to a day at the circus & won't be home from 07.30am to 04.30pm) Goodness my list is already a kilometer long & I think I'll add new things today !! Ahah ! OK, gotta go now. Time is what I'm looking for ! Have a great day !

Hi Sonia! Strawberry and banana is a great combo- I have that in yogurt and smoothies all the time. I'm sure the banana helped with the moistness. Well, I better go hobble off like the 75 year old I am! ;) (((Hugz)))
