Yeah, I named myself officially The Muffin Maker !! ahahah ! I'm soooo fond of muffins, sweet or salted ! They're so cute & practical & most of them are so quick to prepare ! This afternoon, before picking P at school, I decided to make chocolate chip (mini) muffins. I made them almost instantly, and the boys had a blast ! LOL

CHOCOLATE CHIPS MUFFINS
makes 24 mini muffins (or 12 medium muffins)
ingredients :
375 g self-raising flour
2 eggs
125 g caster sugar
375 ml milk
140 g melted butter (unsalted)
chocolate chips as much as you want
Preheat the oven at 200/220°C ~ 400/425°F.
Either grease your muffin molds with melted butter or oil, or don't grease it, if you own a flexible mold like I do.
In a large bowl, sift the flour & add the sugar & the chocolate chips. Mix in.
Whip the eggs with the milk. Mix in with the dry ingredients (flour + sugar + chocolate) with a metal spoon, but DO NOT knead too much.
Melt the butter & mix it in, still NOT kneading much. The dough must be irregular & full of lumps !
The success of making muffins resides in making the dough very irregular & not kneading it much !
Fill your molds (3/4 of each - to let the muffins rise) with a teaspoon (easier).
Put in the oven for 15 or 20 mn (200/220°C ~ 400/425°F) until a skewer/knife hammered inside a muffin goes out totally dry & clean.
I prefer not to bake them too much because it keeps them moist.

Speaking of food ... here is a pic of scrambled eggs I made for the boys. It was just eggs + soft paprika (powder) + poppy seeds + grated parmesan cheese. Simple, not too strong in taste.

Now, this is a book I've been wanting to buy for a while ! I ordered it two weeks ago & received it today. I can't wait to start reading it ! The author is the very inspiring Amanda from Soule Mama.

I also had to share a pic of my today to-do list ... last night when I prepared it (yeah, right before going to bed, I write down a list of the things I will have to do the day after - I'm tragic, I know) While I was making it, I thought about adding little doodles to it, coloring them, and making the list prettier & more attractive ... I found it cute, so I'm sharing the pic ...


OK, I think it's mooooore than enough for today !! (in fact, I had pre-written the first entry, yesterday evening & couldn't wait until tomorrow to post the second) I hope you all are having a great end of the week !

Hi Sonia, wow I can't believe how yummy your mini muffins look. I love the new look although there's no background. I'm not sure if it's on purpose or my browser. I love your cute hugs too :) You make me want to cook, well bake. Have a great day, hugs

And my gracious, your blog makes me hungry, lol. But I'm also learning some new muffin recipes, teehee. I'm the same way with muffins. I absolutely love them. And will also have to try that with the eggs, I usually put a bit of grated parm. cheese for flavour.

mmm, muffins yum. I am impatiently waiting for our rainy weekend, so I can make something yummy in the kitchen.I really don't like having the oven on too much when it's so warm. (still warm this morning, though much cloudier than recent days, and I've just put out a ton of laundry on the washing line).

Have a lovely Friday. We have a long weekend, it's a Bank Holiday on Monday. Is it the same in France? I know the US have Memorial Day, so they're on hols too. Don't know why ours is a holiday though!
